  • 8 eggs
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups + 2 Tbsp all-purpose flour (sifted)
  • 1/3 cup peach juice (from canned peaches)
  • 34 Tbsp Amaretto liqueur (optional)
  • 3 3/4 cups heavy cream
  • 3/4 cup powdered sugar
  • 1 cup peach jam/preserve
  • Canned peaches (15 oz), halved

Instructions

  1. Preheat oven to 350F (175C) and prepare baking pans by greasing them lightly.
  2. In a large bowl, beat eggs and sugar until pale and fluffy. Gradually mix in sifted flour, peach juice, liqueur, and vanilla extract until just combined.
  3. Pour batter into prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Allow to cool completely.
  4. Whip together heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  5. Once cooled, slice each cake layer in half if desired. Spread peach jam on each layer followed by whipped cream filling, adding halved peaches and almond slices between layers as desired.
  6. Frost the top with remaining whipped cream and garnish with additional peach slices before serving.
