  • 1 cup fresh peaches (pureed)
  • 1 cup heavy cream
  • 1 tsp vanilla extract

  1. Preheat your oven to 300F (150C) and line baking sheets with parchment paper.
  2. Sift together almond flour and powdered sugar twice for a smooth texture.
  3. In a separate bowl, whip egg whites until foamy, then gradually add granulated sugar and whip until stiff peaks form.
  4. Gently fold the dry ingredients into the egg whites until combined, being careful not to overmix.
  5. Pipe small circles onto the prepared baking sheets and let them rest for 30 minutes.
  6. Bake macarons for 15-18 minutes until firm but slightly soft when pressed; cool completely before removing from sheets.
  7. Whip heavy cream with powdered sugar and vanilla until fluffy, then fold in pureed peaches to create the filling.
  8. Assemble by sandwiching filling between two macaron shells.
