  • 10 egg roll wrappers
  • 2 tablespoons water (for brushing)
  • Vegetable oil (for frying)
  • Powdered sugar (optional)
  • ¾ cup powdered sugar (for drizzle, optional)
  • ½ teaspoon vanilla bean paste (or vanilla extract, for drizzle, optional)
  • 23 tablespoons milk (for drizzle, optional)
  • Pinch salt (for drizzle, optional)

Instructions

  1. In a small saucepan over medium heat, combine peaches, lemon juice, butter, brown sugar, cornstarch, and cinnamon. Stir until boiling and then simmer for about 10 minutes until thickened. Stir in vanilla and let cool.
  2. Lay an egg roll wrapper on a surface with one corner facing you. Brush the edges with water and place about 2 tablespoons of cooled filling in the center. Fold the sides in and roll tightly to seal.
  3. Heat vegetable oil in a frying pan to 350°F. Fry egg rolls in batches until golden brown (about 5-6 minutes). Drain on a wire rack.
  4. Dust with powdered sugar before serving.
