  • 1 tablespoon lemon juice
  • cup sugar
  • 8 ounces goat cheese
  • Zest of 2 lemons
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme, minced
  • 1 egg

Instructions

  1. Prepare the blackberry jam by cooking blackberries, water, lemon juice, and sugar over medium heat for 20-30 minutes until thickened. Allow to cool.
  2. Thaw and roll out puff pastry on a floured surface into rectangles.
  3. Spread goat cheese and cooled blackberry jam over the dough; cut into strips and twist.
  4. Preheat oven to 400F (200C), place twists on a parchment-lined baking sheet, brush with egg wash, sprinkle with lemon-thyme sugar, and bake for 16-18 minutes until golden brown.
