  • 8 small to medium zucchini
  • 1 cup panko breadcrumbs
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 teaspoons dry parsley
  • 1 teaspoon dry oregano
  • 1 teaspoon dry basil
  • ½ teaspoon garlic powder
  • ¼ cup mayonnaise
  • 2 tablespoons extra virgin olive oil
  • cooking/pan spray

Instructions

  1. Preheat your oven to 375°F (190°C) and position the rack in the top third.
  2. Line a baking sheet with foil and place a rack inside, lightly spraying it with cooking spray.
  3. Cut zucchini lengthwise into quarters to create wedges.
  4. In one bowl, combine panko breadcrumbs, Parmesan cheese, salt, pepper, parsley, oregano, basil, and garlic powder.
  5. In another bowl, mix mayonnaise with olive oil until smooth.
  6. Coat each zucchini wedge with the mayonnaise mixture using a pastry brush.
  7. Dredge each wedge in the breadcrumb mixture until well coated.
  8. Place the coated wedges on the prepared rack and lightly spray their tops with cooking spray.
  9. Bake for 30 minutes, rotating halfway through, or broil for an additional minute if needed for browning.
  10. Serve immediately for the best flavor and texture.
