  • 2 large chicken breasts
  • 1/4 cup flour
  • 2 eggs
  • 2/3 cup panko breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 3 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)
  • 1/2 heaping teaspoon Italian seasoning

Instructions

  1. Preheat oven to 400F (200C). Cut chicken breasts in half lengthwise and pat them dry.
  2. Season both sides with garlic powder, salt, and pepper.
  3. Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with Parmesan cheese and Italian seasoning.
  4. Heat 2 tablespoons of olive oil in an oven-proof skillet over medium heat.
  5. Dredge each chicken piece in flour, then dip in eggs, and finally coat with the breadcrumb mixture.
  6. Cook the chicken in the skillet for 2-3 minutes on each side until golden brown.
  7. Transfer all pieces back to the skillet and bake for an additional 5 minutes or until the internal temperature reaches 165F (75C).
  8. Serve hot with your favorite sides.
