  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1.5 cups grated parmesan cheese
  • 3 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves minced garlic
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • Fresh parsley for garnish

Instructions

  1. Prepare the chicken by patting it dry and slicing into thick strips.
  2. Set up three bowls: one with flour, one with whisked eggs, and one with a mix of panko and parmesan.
  3. Dredge each chicken strip in flour, dip in egg, then coat in the breadcrumb mixture.
  4. Heat olive oil in a skillet over medium-high heat and sear the chicken strips until golden brown (about 4-5 minutes per side). Remove from skillet.

  6. Stir in remaining parmesan and season to taste; simmer until thickened.
  7. Return the chicken to the skillet to coat with sauce or serve separately; garnish with parsley.
