  • 2 lbs Russet or Idaho potatoes, peeled and cut into 1 -inch pieces
  • 1 lbs carrots, peeled and cut into 1-inch diagonal pieces
  • cup avocado oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 2 tsp kosher salt
  • tsp ground black pepper
  • tsp honey
  • 1 Tbsp fresh chopped rosemary
  • Optional: cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 425F (220C) and line a rimmed baking sheet with parchment paper.
  2. In a mixing bowl, combine potatoes and carrots. Add avocado oil, paprika, garlic powder, salt, pepper, honey, and rosemary. Toss until well-coated.
  3. Spread the vegetables in a single layer on the prepared baking sheet. Cover with foil and bake for about 25 minutes.
  4. Uncover, toss again, and roast for an additional 20-25 minutes until crisp and golden brown. If desired, sprinkle with Parmesan cheese during the last few minutes of cooking.
  5. Let cool slightly before serving.
