Orzo Salad is a vibrant and flavorful dish that combines the goodness of Mediterranean ingredients in an easy-to-make recipe. This salad features tender orzo pasta tossed with fresh veggies like cherry tomatoes, cucumbers, and spinach, all brought together by a zesty dressing made from extra virgin olive oil, lemon juice, balsamic vinegar, and Dijon mustard.

Ingredients

  • 1 cup uncooked orzo
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard (or more)
  • 1/2 teaspoon dried oregano (or Italian seasoning)
  • 1/4 teaspoon salt
  • freshly ground black pepper (to taste)
  • 10 oz cherry or grape tomatoes (red and yellow) sliced in half
  • 2 medium cucumbers (quartered)
  • 1/3 cup pitted black olives (sliced)
  • 1/3 cup pitted green olives (sliced)
  • 4 oz crumbled feta cheese
  • 2 oz baby spinach

Instructions

  1. Cook the orzo according to package instructions until al dente. Drain and cool.
  2. In a bowl, whisk together olive oil, lemon juice, balsamic vinegar, Dijon mustard, oregano, salt, and pepper.
  3. In a large bowl, combine the cooled orzo with cherry tomatoes, cucumbers, olives, feta cheese, and spinach.
  4. Pour the dressing over the salad and toss gently to combine. Adjust seasoning if needed. Serve immediately or chill for up to two hours.
