  • 1 tbsp olive oil
  • 1 red onion
  • 3 large cloves garlic
  • 1 carrot diced
  • 1 leek (green ends included, diced)
  • 1 tsp dried thyme
  • 120 g orzo pasta
  • 1.5 l vegetable stock (stock cube and boiling water)
  • 34 sprigs fresh dill
  • Salt & pepper to taste
  • 1/2 lemon (squeezed)
  • Extra virgin olive oil to garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped red onion, garlic, diced carrot, and leek. Saut for about 6 minutes until softened.
  2. Dissolve vegetable stock cube in boiling water to create stock.
  3. Add orzo and vegetable stock to the pot along with dried thyme. Cook on medium heat for 12 minutes until al dente.
  4. Adjust seasoning with salt, pepper, and lemon juice; stir in fresh dill.
  5. Serve hot, drizzled with extra virgin olive oil.
