  • 1 lb flank steak
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 small onion
  • 3 cloves garlic
  • 1 bell pepper
  • 1 cup cherry tomatoes
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese

  1. Heat olive oil in a large skillet over medium-high heat. Season flank steak with Cajun seasoning, salt, and pepper.
  2. Sear the steak for 3–4 minutes until browned, then remove from skillet and set aside.
  3. In the same skillet, sauté diced onion and bell pepper for about 3–4 minutes until softened. Add minced garlic and cook for an additional minute.
  4. Stir in cherry tomatoes and cook for another 2 minutes until softened.
  5. Pour in beef broth; bring to a simmer. Add penne pasta and cook according to package instructions (approximately 10–12 minutes).
  6. Once pasta is al dente, lower the heat and stir in heavy cream and cheddar cheese until melted.
  7. Return seared steak to the skillet, mix well, adjust seasoning as needed.
