  • 1 lb boneless skinless chicken breasts
  • 12 oz penne pasta
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 1 small red onion
  • 2 garlic cloves
  • 2 cans low-sodium chicken broth (14.5 oz each)
  • 1 can fire roasted diced tomatoes (14.5 oz)
  • 3/4 cup heavy cream
  • Parmesan cheese
  • Cajun seasoning

Instructions

  1. Heat 1 Tbsp olive oil in a large pot over medium-high heat. Cook seasoned chicken until browned; set aside.
  2. In the same pot, sauté bell peppers, onion, and garlic until tender.
  3. Add broth, tomatoes, and half of the cream; bring to a boil. Stir in pasta.
  4. Cook pasta until nearly tender; add cornstarch mixture to thicken.
  5. Off heat, mix in remaining cream, parmesan, parsley, and cooked chicken. Season to taste.
