  • 3 large carrots, finely chopped

  • 1 rib celery, finely chopped
  • 2 teaspoons Italian seasoning

  • 1 lb lean ground beef
  • 5 cups low sodium beef broth
  • 798 ml canned diced tomatoes (28 oz)
  • 1.5 cups uncooked whole wheat macaroni pasta
  • 1 cup tomato sauce

Instructions

  1. Heat canola oil in a large pot over medium high heat. Add carrots, onion, and celery. Saut until softened (3-4 minutes).
  2. Stir in Italian seasoning, garlic, salt, paprika, pepper, and red pepper flakes. Cook for another minute.
  3. Add ground beef, breaking it up as it cooks until browned (2-3 minutes).
  4. Pour in beef broth and diced tomatoes; bring to a boil. Cover and simmer for 5-10 minutes or until veggies are tender.
  5. Stir in macaroni pasta and tomato sauce. Cover and cook until pasta is al dente (7-8 minutes), stirring occasionally.
