  • 2 tbsp olive oil (divided)
  • 1 lb lean ground chicken
  • 4 cloves garlic (pressed)
  • yellow onion (diced)
  • cup chopped sun-dried tomatoes
  • 3 large handfuls fresh spinach
  • 2.5 cups low-sodium chicken broth
  • 10 oz small pasta shells
  • cup grated Parmesan cheese
  • cup Greek yogurt

Instructions

  1. In a large pan over medium-high heat, add 1 tbsp olive oil and cook the ground chicken until no longer pink. Season with salt and pepper.
  2. Add the remaining olive oil, garlic, onion, sun-dried tomatoes, Italian seasoning, red pepper flakes, and paprika. Cook until fragrant.
