  • 8 chicken drumsticks
  • 500g baby potatoes, halved or quartered
  • 4 large carrots, cut into thick chunks
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt & black pepper to taste
  • 1/2 tsp smoked paprika (optional)

Instructions

  1. Preheat your oven to 200C (400F) and lightly grease a large baking dish.
  2. In a mixing bowl, toss the baby potatoes and carrot chunks with half the olive oil and seasonings.
  3. Rub the chicken drumsticks with the remaining olive oil and seasonings.
  4. Spread the veggies in the baking dish and nestle the seasoned drumsticks on top.
  5. Roast uncovered for 45-50 minutes until cooked through, flipping halfway.
