  • 2 large boneless & skinless chicken breasts
  • 500 g baby potatoes, halved
  • 2 medium carrots, sliced
  • 200 g green beans, trimmed
  • 3 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 1 tsp dried thyme
  • Salt & pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 200°C (400°F) and lightly grease a large baking dish.
  2. In a mixing bowl, combine olive oil, paprika, garlic powder, onion powder, dried parsley, thyme, salt, and pepper.
  3. Rub half the seasoning mixture over the chicken breasts.
  4. Toss the baby potatoes and carrots with the remaining seasoning and spread them in the baking dish.
  5. Bake for 25 minutes until the veggies soften.
  6. Add green beans on top and bake for an additional 15 minutes until everything is cooked through.
  7. Slice chicken, garnish with fresh parsley, and serve warm.
