  • 4 skinless boneless chicken thighs
  • 200g fresh pineapple chunks
  • 1 small shallot
  • Juice of 1 lime
  • Small handful fresh coriander
  • 1 ripe avocado
  • 8 small corn or flour tortillas
  • 2 tbsp chipotle paste
  • 2 tbsp runny honey
  • 1½ tsp tomato puree
  • 1 tsp salt
  • 2 large garlic cloves

Instructions

  1. Preheat oven to 200°C (400°F).
  2. In a medium bowl, whisk together chipotle paste, honey, tomato puree, lime juice, crushed garlic, and salt.
  3. Cut chicken into bite-sized pieces and toss in the marinade. Let it sit while you prepare the baking tray.
  4. Spread marinated chicken and pineapple chunks onto a baking tray and roast for about 30 minutes until cooked through.
  5. Meanwhile, chop shallots and cube avocado.
  6. Once cooked, squeeze lime juice over the mixture. Toss with shallots and serve in warmed tortillas topped with avocado and fresh coriander.
