  • 4 boneless, skinless chicken thighs
  • 12 oz andouille sausage
  • 1 1/2 cups long-grain white rice
  • 3 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 small onion
  • 1 bell pepper
  • 2 cloves garlic
  • Olive oil

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add chicken and sausage; brown for about 5-7 minutes. Remove from pan.
  2. Saut diced onion and bell pepper in the same skillet for 3-4 minutes until softened. Add garlic and cook for another minute.
  3. Stir in rinsed rice, Cajun seasoning, and smoked paprika to coat the rice well.
  4. Pour in chicken broth, return chicken and sausage to the pan, cover, and simmer on low heat for 18-20 minutes until rice is tender.
  5. Fluff with a fork before serving; garnish with fresh parsley if desired.
