  • 1 cup unsalted butter (softened but still cool)
  • 1⅓ cups brown sugar (lightly packed)
  • ½ cup granulated sugar
  • 2 large eggs
  • 1½ tablespoons unsulphured molasses
  • 1½ teaspoons pure vanilla extract
  • 12 tablespoons unsalted butter (softened to cool room temperature)
  • 1½ cups marshmallow creme
  • 2 cups powdered sugar (sifted if lumpy)
  • ¾ teaspoon pure vanilla extract
  • couple pinches salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In one bowl, combine oats, flour, cinnamon, baking soda, and salt.
  3. In another bowl, cream softened butter with brown and granulated sugar until fluffy.
  4. Mix in eggs, molasses, and vanilla extract until combined.
  5. Gradually add dry ingredients to wet mixture until just combined.
  6. Scoop dough onto parchment-lined baking sheets and bake for about 10 minutes until edges are golden.
  7. For frosting, beat together softened butter, marshmallow creme, powdered sugar, vanilla extract, and salt until smooth.
  8. Once cookies cool completely, spread frosting on one cookie and sandwich with another.
