  • 4 cups mixed salad greens
  • 6 ounces green beans
  • 4 large eggs
  • 2 cups baby potatoes
  • 5 ounces canned tuna (drained)
  • 1 cup pitted olives
  • 1 cup grape tomatoes (halved)
  • English cucumber (thinly sliced)
  • small red onion (thinly sliced)
  • ? cup extra virgin olive oil
  • cup lemon juice
  • 1 teaspoon Dijon mustard
  • teaspoon honey
  • 1 garlic clove (minced)

Instructions

  1. Make the vinaigrette by whisking together olive oil, lemon juice, Dijon mustard, honey, garlic, salt, and pepper in a small bowl.
  2. Boil water in a pot and add eggs; cook for about 6 minutes for jammy yolks. Transfer to an ice bath to cool before peeling.
  3. In another pot, boil salted water and cook potatoes until tender for about 15 minutes; cool and slice in half.
  4. Blanch green beans in the potato pot for 12 minutes; transfer to ice water to retain color.
  5. Assemble by spreading mixed greens on a platter and layering with potatoes, green beans, tuna, tomatoes, olives, red onion, and halved eggs. Drizzle with half of the vinaigrette.
