  • 16 ounces cremini mushrooms
  • 1 small onion
  • 3 cloves garlic
  • cup raw walnuts
  • 1 cup cooked pinto or black beans
  • 1 cups cooked pearled barley
  • cup panko breadcrumbs
  • Nutritional yeast
  • Vegan Worcestershire sauce
  • Thyme
  • Smoked paprika
  • Salt
  • Pepper

Instructions

  1. Saut chopped onion and sliced mushrooms in a large pan over medium-low heat until moisture evaporates (about 15 minutes). Add garlic, thyme, and paprika; cook for an additional 3 minutes.
  2. Preheat oven to 400F and line a baking sheet with parchment paper.
  3. In a food processor, pulse walnuts until coarsely crumbled. Add the sauted mixture along with barley, beans, nutritional yeast, Worcestershire sauce, breadcrumbs, salt, and pepper; pulse until combined but still chunky.
  4. Form the mixture into about eight burger patties.
  5. Bake on the prepared sheet for 30-35 minutes, flipping halfway through. Alternatively, pan-sear in a cast-iron skillet over medium heat until charred.
