  • 1/4 cup butter
  • 3/4 cup sugar
  • 1 egg
  • 1/8 tsp salt
  • 1 tsp cream of tartar
  • 1/2 tsp baking soda
  • 1 1/3 cups flour
  • 1 cup heavy whipping cream
  • 8 oz cream cheese (softened)
  • 3/4 cup powdered sugar
  • Various fresh fruits (strawberries, blueberries, kiwis)
  • Melted white chocolate (for drizzling)

Instructions

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, cream butter and sugar until light and fluffy. Add the egg, salt, cream of tartar, baking soda, and flour; mix until combined.
  3. Roll dough on a floured surface and cut out circles using a round cookie cutter.
  4. Bake cookies on a greased baking sheet for 15-18 minutes until golden brown. Cool in the refrigerator for about 30 minutes.
  5. Whip heavy cream until fluffy; in another bowl, beat cream cheese and gradually add powdered sugar until smooth.
  6. Fold whipped cream into the cream cheese mixture and spread it over cooled cookie crusts.
  7. Chill assembled pizzas for an hour before topping with sliced fruits and drizzling with melted white chocolate.
