  • 1 small onion (diced)
  • 1 pound ground beef
  • 10 ounces canned diced tomatoes with chilies (Rotel)
  • 2 small zucchini (cubed)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon coriander
  • 1/4 teaspoon red pepper flakes
  • 2 ounces cotija cheese (crumbled)

Instructions

  1. Heat olive oil in a non-stick saut pan over medium heat. Add diced onions and saut until softened.
  2. Crumble in the ground beef; cook until browned and fully cooked.
  3. Stir in the canned tomatoes, spices, and cubed zucchini until well combined.
  4. Cover the pan and simmer on medium-low heat for about 10 minutes until the zucchini is tender.
  5. Remove from heat and sprinkle with cotija cheese before serving warm.
