  • 1 tbsp ghee or butter
  • 3 cups corn kernels
  • tsp fine sea salt
  • cup crumbled cotija cheese
  • cup thinly sliced green onions
  • cup cilantro
  • 1 clove garlic, finely minced
  • 1 tbsp fresh lime juice
  • 2 tbsp mayonnaise
  • 1 tbsp sour cream
  • 1 tsp tajin

Instructions

  1. In a small bowl, combine minced garlic with lime juice and set aside.
  2. Heat olive oil and ghee in a large skillet over medium heat.
  3. Add corn and sprinkle with sea salt; stir to coat.

  5. Transfer corn to a mixing bowl; mix mayonnaise, sour cream, tajin, and soaked garlic together in a small bowl.
