  • Olive or vegetable oil
  • 6 cups fresh corn kernels
  • 1 cup chopped yellow onion
  • Ancho chili powder
  • 2 garlic cloves
  • 4 cups chicken or vegetable broth
  • 1/2 cup sour cream
  • 1/2 cup grated Cotija cheese
  • Fresh lime juice
  • Grated lime zest
  • Chopped cilantro

Instructions

  1. Heat oil in a large pot over medium-high heat. Saut corn, onion, chili powder, salt, and pepper until onions are soft and corn is lightly charred (8-10 minutes).
  2. Add garlic and cook for 1 minute. Remove 1 cups of the mixture and set aside. Stir in broth and stripped corn cobs; bring to boil, then simmer for 20 minutes.
  3. Discard corn cobs. Blend soup until smooth, then return to pot.
  4. Stir in sour cream, Cotija cheese, half of the reserved corn mixture, lime juice, and cilantro. Reheat gently.
  5. Serve topped with remaining corn mixture and extra Cotija cheese.
