  • 2 cups chopped romaine lettuce
  • cup seeded and chopped tomato
  • cup peeled and chopped jicama
  • cup fresh corn kernels
  • 1 large avocado (diced)
  • One 15.5-ounce can black beans (rinsed and drained)
  • cup freshly squeezed lime juice
  • 2 tablespoons honey
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons finely chopped fresh cilantro
  • 1 medium garlic clove (minced)
  • 1 teaspoon finely chopped fresh jalapeno
  • cup reduced-fat crumbled feta cheese

Instructions

  1. Wash and chop the romaine lettuce, avocado, tomato, jicama, and bell pepper into bite-sized pieces.
  2. Rinse the canned black beans under cold water and drain well.
  3. In a large mixing bowl, combine all the chopped vegetables along with black beans and feta cheese.
  4. In a separate bowl, whisk together lime juice, honey, olive oil, minced garlic, cilantro, and jalapeo to make the dressing.
