  • 1 cucumber
  • 1 pint grape tomatoes
  • 1/2 red onion
  • 1/4 bunch fresh parsley
  • 1 can cannellini beans
  • 1 can chunk light tuna
  • 2 oz. feta cheese
  • 1/4 cup olive oil
  • 2 Tbsp red wine vinegar
  • 1 Tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a mixing bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper to create the vinaigrette. Set aside.
  2. Dice the cucumber and red onion (soak onion in ice water if a milder flavor is desired), halve the tomatoes, and chop the parsley.
  3. In a large bowl, combine the chopped vegetables. Pour the vinaigrette over and stir to coat.
  4. Rinse and drain the beans and tuna. Gently fold them into the vegetable mixture along with crumbled feta cheese.
  5. Serve immediately or refrigerate for up to four days.
