  • 4 medium sweet potatoes
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped Kalamata olives
  • 1/4 cup fresh parsley or oregano (chopped)

Instructions

  1. Preheat the oven to 400F (200C) and line a baking sheet with parchment paper.
  2. Wash and peel the sweet potatoes if desired; then cut into even-sized cubes.
  3. In a large mixing bowl, toss the sweet potato cubes with olive oil, salt, and pepper until evenly coated.
  4. Spread the cubes in a single layer on the baking sheet. Roast for 25-30 minutes until tender and golden brown, stirring halfway through.
  5. Remove from oven and sprinkle with feta cheese and Kalamata olives while hot.
  6. Garnish with freshly chopped herbs before serving.
