  • 4 pieces of lavash bread
  • 1/2 cup tomato jam (or raw/sun-dried tomatoes)
  • 6 ounces arugula (or greens of choice)
  • 1/2 cup tofu feta cheese
  • 1 English cucumber (sliced thin)
  • 1/4 cup kalamata olives (diced)
  • 1/2 cup pickled red onions or raw red onions
  • 1/2 cup hummus

Instructions

  1. Lay each lavash wrap flat.
  2. Spread 1/4 of the tomato jam on one side.
  3. Layer with arugula, followed by tofu feta.
  4. Add cucumber slices, kalamata olives, and pickled onions.
  5. Smear hummus on the opposite end.
  6. Roll tightly from left to right.
  7. Serve cold or heat in a skillet until golden brown.
