Ingredients

  • Extra virgin olive oil
  • Brown onion
  • Carrot
  • Celery
  • Garlic
  • Cherry tomatoes
  • Vegetable stock
  • Parmesan rind
  • Dried oregano
  • Red chili pepper flakes
  • Fresh rosemary
  • Dried orzo pasta
  • Curly kale
  • Fresh basil leaves

Instructions

  1. In a large saucepan over medium heat, add olive oil. Saut diced onion, carrot, and celery for 5 minutes until softened.
  2. Stir in chopped garlic and cook for an additional minute.
  3. Add vegetable stock, Parmesan rind, cherry tomatoes, dried oregano, red chili pepper flakes, and fresh rosemary. Bring to a simmer.
  4. Once simmering, stir in orzo pasta and cook for about 8 minutes.
  5. Add chopped kale just before the pasta is fully cooked; allow it to wilt.
  6. Adjust consistency with more stock if needed. Serve hot, topped with grated Parmesan cheese and fresh basil.
