  • 6 skinless boneless chicken thighs
  • 1 tablespoon garlic paste (or minced garlic)
  • teaspoon dried oregano
  • teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 1 small yellow onion (finely diced)
  • 2 cloves garlic (minced)
  • 1 small lemon (thinly sliced)
  • cup white wine
  • 1 cup chicken broth
  • 1 cup marinated olives

Instructions

  1. Combine garlic paste, oregano, Italian seasoning, salt, and pepper in a bowl. Add chicken thighs and coat evenly; set aside.
  2. Heat olive oil in a nonstick skillet over medium heat. Sear chicken thighs for about 5 minutes on each side until browned. Remove and set aside.
  3. In the same skillet, saut onions and minced garlic until softened. Add lemon slices and white wine; cook for about 3 minutes.
  4. Pour in chicken broth, return chicken to the skillet, bring to a boil, then reduce to a simmer for 15 minutes.
  5. Stir in marinated olives and cook for an additional 10 minutes until flavors meld.
