  • 1 cup orzo pasta
  • 1 cup sliced mushrooms
  • 1/2 cup Marsala wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Cook chicken for 5-7 minutes on each side until golden brown. Remove and set aside.
  2. In the same skillet, melt butter and saut mushrooms for 4-5 minutes until browned. Add garlic and thyme; cook for an additional minute.
  3. Deglaze the skillet with Marsala wine, scraping up browned bits. Simmer for 2-3 minutes.
  4. Add chicken broth and bring to a gentle simmer. Stir in orzo; cook for 8-10 minutes until al dente.
  5. Reduce heat to low and stir in heavy cream until smooth. Return chicken to skillet to warm through; adjust seasoning with salt and pepper.
  6. Garnish with fresh parsley and serve hot.
