  • 3 cups ripe mango (cubed)
  • 2 tablespoons sugar
  • 10 fluid ounces all-purpose cream
  • 7 ounces mascarpone cheese
  • cup water
  • 2 tablespoons vegan gelatin powder
  • 1 cup powdered sugar

Instructions

  1. Blend 2 cups of ripe mango, water, and sugar until smooth to create the mango puree.
  2. Dissolve vegan gelatin in warm water and mix into the mango puree along with powdered sugar.
  3. Whip mascarpone until smooth, then gradually add all-purpose cream until stiff peaks form. Fold in the mango mixture.
  4. Cut sponge cake into two layers. In a springform pan, layer one sponge piece, scatter remaining mango cubes, pour half the cream mixture, then top with the second layer and remaining cream.
  5. Chill for at least one hour to set before serving.
