  • 1 cup granulated sugar
  • 1/2 cup evaporated milk
  • 8 tbsp unsalted butter (divided)
  • 1/4 cup boiling water
  • 1 1/2 cups toasted and coarsely chopped pecans

Instructions

  1. Prepare your baking sheet by lining it with aluminum foil or a silicone mat; spray with nonstick cooking spray.
  2. In a medium saucepan over medium heat, combine granulated sugar, brown sugar, and evaporated milk. Stir until dissolved.
  3. Insert the candy thermometer and cook the mixture while stirring occasionally until it reaches 240F (soft ball stage).
  4. Remove from heat, drop in cubed butter without stirring, and let sit for one minute before adding pecans.
  5. Stir gently until the mixture thickens and lightens in color.
  6. Quickly drop spoonfuls onto the prepared baking sheet before it sets.
  7. Allow pralines to cool at room temperature for about 30 minutes until fully hardened.
