  • 3 pounds red potatoes
  • 8 ounces cream cheese (softened)
  • 4 tablespoons butter (softened)
  • 8 ounces turkey bacon (cooked and crumbled)
  • 8 ounces sharp cheddar cheese (shredded)
  • 6 green onions (thinly sliced)
  • 6 to 8 cups pulled beef
  • 4 ounces Colby Jack cheese (shredded)

Instructions

  1. Preheat your oven to 350F and lightly spray a 9 x 13 baking dish with cooking spray.
  2. In a large pot, boil salted water; add potatoes until fork-tender. Drain and mash in the pot.
  3. Mix in cream cheese, butter, turkey bacon, green onions, and shredded cheeses until well combined. Transfer to the baking dish.
  4. Top with pulled beef and remaining cheese. Cover with foil and bake for 15 minutes; then remove foil and bake for an additional 5 minutes until cheese melts.
  5. Let sit briefly before serving; garnish with extra green onions if desired.
