  • 1 bay leaf
  • 1 large cucumber, diced
  • red onion, diced
  • 1 cup Medjool dates, diced

Instructions

  1. Rinse lentils and combine with water and bay leaf in a medium saucepan. Bring to a boil.
  2. Reduce heat, cover, and simmer for 1620 minutes until tender but not mushy.
  3. Drain and chill lentils briefly in the fridge.
