  • 1 pound uncooked pasta (e.g., gemelli)
  • 1 tablespoon olive oil
  • 1 pound asparagus, chopped
  • 4 cloves garlic, minced
  • 1 jar (14 ounces) artichoke hearts
  • 2/3 cup grated Parmesan cheese
  • 1/2 cup toasted pine nuts
  • 1/4 cup freshly-squeezed lemon juice
  • 1/4 cup olive oil (for vinaigrette)
  • 1/4 cup roughly-chopped fresh basil leaves
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly-cracked black pepper

Instructions

  1. In a jar, combine vinaigrette ingredients and shake well until emulsified.
  2. Cook pasta in salted boiling water until al dente. Drain and rinse under cold water.
  3. Saut asparagus in olive oil over medium-high heat for about 5 minutes; add garlic and saut for another minute.
  4. In a mixing bowl, combine pasta with vinaigrette, sauted asparagus, artichokes, Parmesan cheese, and pine nuts. Toss well to combine.
  5. Serve immediately or refrigerate in an airtight container.
