  • cup butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • 1 cups all-purpose flour
  • tsp baking powder
  • tsp baking soda
  • tsp salt
  • cup sour cream or plain Greek yogurt
  • 1 cup diced rhubarb

Instructions

  1. Preheat the oven to 350F (175C) and grease a 95-inch loaf pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in lemon juice and zest.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add dry ingredients to the wet mixture until just combined. Fold in sour cream or yogurt and diced rhubarb.
  4. Pour batter into the prepared loaf pan and smooth the top. Bake for 5060 minutes or until a toothpick comes out clean.
  5. Allow to cool for 10 minutes in the pan before transferring to a wire rack.
