  • 2 tsp vanilla extract
  • Zest and juice of 2 large lemons
  • 2 cups all-purpose flour

  • 11 cups chopped frozen raspberries

Instructions

  1. Preheat oven to 375F (190C) and line baking sheets with parchment paper.

  3. In another bowl, combine flour, baking powder, and salt. Gradually add this mixture to the wet ingredients until just combined.
  4. Gently fold in the raspberries.
  5. Scoop cookie dough onto prepared baking sheets, spacing apart. Bake for 1012 minutes or until edges are lightly golden.
  6. Cool on baking sheets before transferring to wire racks.
