  • 2 1/4 cups all-purpose flour
  • 1/2 cup granulated sugar (for crust)
  • 1 cup unsalted butter (melted)
  • 1 1/2 cups granulated sugar (for filling)
  • 6 large eggs
  • 3/4 cup fresh lemon juice

Instructions

  1. Preheat oven to 350F (175C). Grease a baking dish or line with parchment paper.
  2. Make the crust by combining flour, sugar, cornstarch, and salt; mix in melted butter and press into the prepared dish. Bake for 15 minutes until lightly golden.
  3. Prepare raspberry puree by cooking raspberries over medium heat for about 5-7 minutes; strain seeds.
  4. In another bowl, whisk together sugar, cornstarch, eggs, raspberry puree, and lemon juice until smooth.
  5. Pour filling over the baked crust and return to oven for an additional 30 minutes or until set.
  6. Cool completely before slicing into bars.
