  • 1 tablespoon sugar
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1/4 cup ricotta cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1 tablespoon fresh thyme

Instructions

  1. Prepare the dough by combining warm water, sugar, and yeast in a bowl; let sit until frothy. Mix flour and salt in another bowl, then add the yeast mixture and olive oil. Stir until a dough forms.
  2. Knead the dough on a floured surface for about 8–10 minutes until smooth. Place in an oiled bowl, cover, and let rise for 1–1.5 hours.
  3. While the dough rises, mix ricotta, mozzarella, Parmesan, lemon zest, and lemon juice in a bowl to create the topping.
  4. Preheat your oven to 475°F (245°C) with a pizza stone or baking sheet inside.
  5. Roll out the risen dough into a thin circle of about 12 inches and transfer it onto parchment paper.
  6. Spread the cheese mixture over the dough, leaving a border for the crust. Sprinkle thyme on top.
  7. Bake for 10–12 minutes until golden brown and bubbly.
  8. Drizzle with olive oil and honey before serving.
