  • 4 boneless skinless chicken breasts
  • Salt and pepper (to taste)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • cup heavy cream
  • Juice and zest of 1 lemon
  • cup grated Parmesan cheese
  • 4 cups fresh spinach leaves

Instructions

  1. Pound chicken breasts to an even thickness; season with salt and pepper.
  2. Heat olive oil in a large saut pan over medium-high heat. Cook chicken for about 3-4 minutes on each side until golden brown and fully cooked. Remove from the pan.
  3. In the same pan, saut minced garlic for one minute. Add chicken broth, lemon juice, and zest; bring to a boil before reducing heat to low.
  4. Stir in heavy cream and simmer for about five minutes until slightly thickened. Add Parmesan cheese until melted.
  5. Incorporate fresh spinach into the sauce; cook until wilted. Return chicken to the pan, spoon sauce over it, and sprinkle extra Parmesan on top.
  6. Cover and cook for an additional two minutes to melt the cheese.
