  • 1/2 cup lemon curd (for filling)
  • 2 teaspoons dried lavender flowers

Instructions

  1. Preheat your oven to 350F (175C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
  3. Add egg yolks, lemon zest, lemon juice, and vanilla extract to the mixture; blend well.
  4. In another bowl, whisk together flour and salt before gradually incorporating it into the wet ingredients until just combined.
  5. Roll dough into one-inch balls and place them on the prepared baking sheet. Press down in the center of each ball to create an indentation.
  6. Bake for approximately 14 minutes or until lightly golden around the edges.
