  • 1 cup quinoa (uncooked)
  • 2 cups vegetable broth or water
  • 1 can chickpeas (15 oz), rinsed and drained
  • cup fresh parsley, chopped
  • cup fresh mint, chopped
  • cup fresh dill, chopped
  • 34 green onions, sliced
  • cup extra virgin olive oil
  • cup lemon juice (freshly squeezed)
  • 1 tablespoon lemon zest

Instructions

  1. Rinse quinoa under cold water. In a pot, combine quinoa and vegetable broth/water. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until fluffy.
  2. While quinoa cooks, rinse chickpeas and set aside.
  3. In a mixing bowl, combine parsley, mint, dill, green onions, garlic, lemon juice, lemon zest, olive oil, salt, pepper, and red pepper flakes (if using). Mix well.
  4. Once quinoa has cooled slightly, add it along with chickpeas to the mixing bowl. Toss gently until combined.
  5. Serve warm or chilled; drizzle with additional olive oil if desired.
