  • Juice and zest of 1 large lemon
  • 2 tablespoons olive oil
  • 6 cloves garlic (pressed or finely chopped)
  • 1/4 cup white apple vinegar
  • 2 teaspoons dried parsley
  • Salt and pepper to taste

Instructions

  1. Soak wooden skewers in water for at least 30 minutes to prevent burning.
  2. In a mixing bowl, whisk together lemon zest, lemon juice, olive oil, garlic, vinegar, parsley, salt, and pepper.
  3. Rinse shrimp under cold water and remove shells if desired (tails can be left on).
  4. Thread four shrimp onto each skewer securely.
  5. Marinate the skewers in the mixture for 20-30 minutes in the refrigerator.
  6. Preheat grill (indoor or outdoor) on low heat.
  7. Grill skewers for about 3-4 minutes per side until shrimp turn pink and opaque.
