  • 1 lb orzo
  • 1 large cucumber, diced
  • cup red onion, diced
  • 1 cups green onions, sliced
  • 2/3 cup lemon juice (about 45 lemons)
  • 2/3 cup olive oil
  • 1 tsp salt
  • tsp black pepper
  • cup dill, chopped
  • cup parsley, chopped
  • Optional: lb feta cheese

Instructions

  1. Cook the orzo in a large pot of salted boiling water for 8-10 minutes until al dente. Drain using a colander and transfer to a mixing bowl.
  2. In a small bowl or jar, whisk together olive oil, lemon juice, salt, and black pepper for the dressing.
  3. Pour the dressing over the cooked orzo and stir until well combined. Chill in the refrigerator.
  4. Once cooled, mix in the cucumber, red onion, green onions, dill, parsley (and feta cheese if using).
  5. Taste and adjust seasoning if needed before serving.
