  • 2 cups diced carrots
  • 1 cup finely chopped onion
  • cup finely chopped celery
  • 1 tablespoon minced garlic
  • 1 pounds boneless, skinless chicken breasts
  • 6 cups low sodium chicken broth
  • 1 cup dry orzo pasta
  • cup fresh squeezed lemon juice
  • teaspoon black pepper
  • teaspoon dried parsley
  • teaspoon dried thyme
  • teaspoon salt
  • 2 bay leaves

Instructions

  1. In a large pot or Instant Pot, heat olive oil over medium heat. Saut carrots, onion, celery, and garlic for about 5-7 minutes until softened.
  2. Stir in black pepper, parsley, thyme, salt, and bay leaves.
  3. Add chicken breasts and chicken broth; bring to a boil.
  4. If using an Instant Pot, seal and cook on high pressure for 15 minutes. For stovetop cooking, reduce heat to low and simmer for about 30 minutes until the chicken is cooked through.
  5. Remove chicken; shred with two forks and return to the pot.
  6. Stir in orzo pasta; simmer until tender (about 10 minutes).
  7. Before serving, mix in fresh squeezed lemon juice.
