  • 500g lean lamb mince
  • 150ml fat-free plain natural yoghurt
  • 2 onions, finely chopped
  • 2 teaspoons minced garlic
  • 100g courgette (zucchini), diced
  • Various spices (cumin, coriander, garam masala, etc.)
  • 1 large egg
  • 1 tablespoon mango chutney
  • 2 teaspoons cornstarch
  • 1.5 tablespoons fresh finely chopped mint
  • 1 teaspoon lemon juice
  • 2 teaspoons grated fresh ginger
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon hot chilli powder
  • 1 teaspoon paprika
  • 1 teaspoon garam masala
  • teaspoon turmeric
  • teaspoon ground cloves
  • teaspoon ground cinnamon
  • 5 green cardamom pods
  • 1 bay leaf
  • 2 tablespoons tomato paste
  • 480ml chicken stock
  • 1 teaspoon granulated sweetener
  • Salt and black pepper to season
  • Low calorie spray

Instructions

  1. Prepare the mint yoghurt by mixing yoghurt, mango chutney, cornstarch, mint, and lemon juice in a bowl; set aside.
  2. In a large frying pan, saut chopped onions and minced garlic until golden; remove from heat.
  3. In a bowl, combine lamb mince with egg, sauted onion/garlic mix, salt, and pepper; form into 16 koftas.
  4. Brown the koftas in the same pan for about 5 minutes; set aside.
  5. Cook onions, garlic, ginger, and courgette in the pan until softened; add the spices and tomato paste.
  6. Stir in chicken stock and simmer for 5 minutes; return koftas to the pan with mint yoghurt mixture.
  7. Cover and simmer for 1215 minutes until the sauce thickens.
