  • 30 oz zucchini (4 medium)
  • 2.5 tsp coarse sea salt
  • 0.4 oz garlic (2 large cloves)
  • 2 green onions (chopped)
  • 1 tbsp avocado oil
  • 23 tsp toasted sesame oil
  • 1 tbsp toasted white sesame seeds (plus more for garnish)

Instructions

  1. Trim the ends of the zucchini and slice into thin rounds using a mandoline.
  2. Place zucchini in a large bowl, sprinkle with salt, and let sit for 20 minutes to draw out excess moisture.
  3. Mince the garlic and chop the green onions while waiting.
  4. Squeeze excess water from zucchini slices and set aside.
  5. Heat avocado oil in a large saut pan over medium-high heat.
  6. Stir-fry zucchini for 1 minute, then add garlic, green onions, and sesame oil; saut for an additional minute.
  7. Transfer to a serving plate and garnish with extra scallions and sesame seeds.
