  • 34 lbs chuck roast
  • 3 carrots (peeled and cut into chunks)
  • 1 large onion (sliced)
  • 5 garlic cloves (minced)
  • 1 tablespoon fresh ginger (minced)
  • cup soy sauce
  • 2 tablespoons gochujang
  • 2 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 cup beef broth

Instructions

  1. Pat the chuck roast dry and season generously with salt and pepper.
  2. Sear the roast in a Dutch oven over medium-high heat until browned on all sides (about 34 minutes per side). Remove and set aside.
  3. In the same pot, saut onion, garlic, and ginger for 34 minutes until fragrant.
  4. Stir in gochujang, soy sauce, brown sugar, and rice vinegar until combined.
  5. Deglaze with beef broth while scraping up browned bits from the pot.
  6. Return the chuck roast to the pot and add carrot chunks. Cover and braise at 325F for 3 to 3.5 hours or until fork-tender.
  7. Skim excess fat from the sauce, drizzle with sesame oil, garnish with green onions and cilantro before serving.
